Although its said that you don't kill these to get Challenges, maybes its a bluff to make you avoid them and not do the Minigame so, so easily and quick :)

Kill Tzhaar Members for a Tzhaar Challenge.
Kill Men, Guards and so on for a Human Challenge.
Kill Dwarfs for a Dwarf Challenge.
Kill Elves for a Elf Challenge.
Kill Werewolves for a Werewolf Challenge.
Kill Gnomes for a Gnome Challenge.

Bare in mind these are just my assumptions (if i spelled it right).

We would just like to clarify, that creatures sitting in the champions guild are NOT the creature types you will need to kill if you want to get a champions challenge.

Those guys are the champions of champions, you might possibly get to fight one of their number if you can complete enough other challenges from "lower champions."

Sorry we're not going to give away what creatures are likely to challenge you initially. The only hint that we're giving is that the ones in the bottom of the champions guild are NOT the ones you are after, they'll only challenge you later.

We have updated the news story and manual pages to reflect this fact too.
