Is it possible to see what my sisters desktop is doing from my laptop? Where both on the same router if that means anything.

you can use something like logmein.com but you need to install the program to her pc.

You could probably use packet sniffing tecniques on your network to see what she's doing on the internet but i doubt you'd want to do that lol.

That's actually not a bad idea, I used http://www.ethereal.com/ once. Worked like a treat with my hub!
