First movie that I saw him in was Sleepy Hollow. So, I'm going to have to say that it was probably the best he's been in. Many will probably say POTC (they need to watch a few more movies ;)).
The only valid way in which I could determine is if I watched the movies he's been in back-to-back but I don't have the time ;D

i think ive watched once upon a time in mexcio, but i cant remember so i couldnt say :P
but i throughly enjoyed his role in sweeney todd, one of my favourite films of last year.
i also enjoyed the ninth gate, if anyone has watched that?
sleepy hollow was also a good film, but i found his role in PoTC got quite boring quite quickly

I really don't like Tim Burton which might be why I like Once Upon A Time In Mexico more than the others, as Depp quite often does films with Burton.
