So can only 1 team have say Cristiano Ronaldo. 1 team in the world can have him, and then you have to sign him off them?

no,

each game world has 1,000 players and there are 14 gameworlds each game world has only 1 ronaldo.

So if you join e.g. game world fernandez only 1 person can take ronaldo on that gameworld.
