Does it matter for the fish to have a proper night+day environment?
I only ask cause I often forget to turn the light on in the tank during the day then when I remember they only get like a couple ours of light then I turn it off to go to bed. Does it matter? Do the fish care? Do I care if they care?

We have one fish (other one died a month ago) which is going on 5 years old now. We have no idea how it's living so long considering it's a normal goldfish from the pet store, with no filter or anything.
We have not thought about daylight hours for the fish. Natural light always gets in to the tank through the day, as it's in the dining room next to the biggest window. Through the night, it's pitch black.
I do not think it matters what light they have. They sleep whenever they can and wake up when they feel movements.
I wouldn't worry about it, I'd just put it's light on whenever you can remember. If you forget, don't worry about it. Just move on to the next day. :)

do they actually sleep lol? The only time I see them @ night is when I turn off the light to call it a night and they just go crazy for 5 seconds after the light goes out then by that time im gone.

Yes they do actually "sleep". It's not sleep which we would think, it's more of a rest.
When we go in to the dining room in the middle of the night, the fish "wakes up" and starts swimming about until it knows it's just us and we mean it no harm.
