I'm assuming the 'Organise' app allows you more pages but I haven't tested it...

Ya organise puts them into kind of sub folder things, i have a 2G so will post my theme when Jailbroken -.-

Theres already a post on ipod themes. They changed the rule about bumping ages ago if its a post like this and you have a valid point and it isn't spam etc..

Thats just the default theme.. you should jailbreak and then you will have much more freedom with what you can do with your iphone.
