you know the "iPod" symbol at the top left of the ipod screen? my mate managed to get his to say something else, "jacks ipod" i think it was. I was wondering in WHAT DIRECTORY (eg, /system/library) this image is held in?

Well, tbh you can't talk because 1. It's not an image and 2. Yes, being jailbroken or not will affect your FTP program. You need to be jailbroken to enable SSH, and without SSH enabled, you can't connect to it via FTP. :)

MakeItMine will do it for you, I'm not sure if it works with newer versions of iTunes/iPod firmware actually. There will be a Cydia app. Search 'Application to change text on iPod touch jailbroken' or something

You do realise you can swap the normal "iPod" with your desired text instead of your clock?

I prefer the simple Extended Preferences, edits your settings to add more options including the options to change the carrier/time.
