Been working on this for a little while, I know some users on here have iPod Touch's that have been jailbroken.
Here's a screenshot of the main application.
As you can see some features are limited at the moment.
On the right side of the screen, you can see individual commands to load your jailbroken iPod Touch 2G. You can do the individual steps (which also helps with other things, automates it)..
You can also do the "Full Boot Process" which automates this for you, all you need to do is click it, and unplug it once, and it boots the iPod in about 3 seconds flat.

The "iPod Status" is a useful tool in determining whether your iPod is in DFU/***/Recovery or a normal mode.

This tool communicates with my redsn0w console application similar to iRecovery but for Windows.
