iPhone/iPod Touch Homebrew Applications and Themes

I am planning to jailbreak my iPod Touch 2G tomorrow using Caleb's 2G tethered jailbreak, but I am wondering what I should get?

What good apps are there? Where can I find some good Winterboard themes and do you have any recommendations?
