I can't custom build so it will have to be made on one of those custom PC sites or prebuild. I would like as best as possible spec so it's future proof as I will be keeping this for a good few years.

Meh, I just made my own PC on pcspecialists.co.uk and it came to £1150. (with monitor, mouse and keyboard)
