How do i set it so that my update (sources.list) is set to update from a specific site? For instance, I want to download my updates from here (http://mirror.internode.on.net/pub/ubuntu/releases/) instead of the official repo.

Go and edit your sources.list and just change the URLs, don't delete the old ones, just put a # infront of them to comment them out incase the new ones don't work. Then save the file and run apt-get update.

I can't get to an Ubuntu computer at the moment but in the sources.list there should be a few lines with URLs in them, copy them then go down a few lines and paste them, then put a # infront of each line of the lines you just copied, then change the URLs on the bottom half of the file (that you just pasted) to the URL that you posted above.
Sorry if thats a bit confusing, as I say, I don't have a file I could edit for you right now :(
