The Guardian app. It has a brilliant feature allowing you to download whole news sections to read offline... which is super useful for iPod touch users. I do not regret paying for it in the slightest.

Oh, and Minigore is a staple of mine. It was the first app I paid for, but I think it's still my favourite game.

FlightControl still, although I do like tweetie (twitter app for iphone) as it's ever so complexed in what it can do.
