Are there any applications out there that let you simulate driving?
I understand there are flying ones etc.

Also i'd like a wheel that's come with a gear stick and the three pedals, brake, accelerate and clutch?

Not sure if there's anything like this, but it would be great if it was.
Anyone know if there's something like this?

They do exist cause the BSM use them for nervous drivers, but i'm not sure if something like that gets sold. Good Luck though.

You can buy wheels, to get one with a Clutch and H pattern gear stick though you'll be looking at something like the Logitech G25, which is £150. Then you have to find a driving sim/game that'll suit you.
