confused...

I have bunkbeds, and the bit I've circled hold it together on one part

But I'm slightly concerned, as it's twisting, and I'm on the bottom. Is it supposed to twist, because the other ones on my bed don't. Also, when I twist it, it sort of screws out the other side. So what will happen if it comes out?

If i were you, i would leave it alone because you could be unscrewing something and you may wake up one morning with another bed on your face. Try twisting it the other way to tighten it?

I did leave it alone, after I tightened it, and it wouldn't move :D.

had to take down a bunk bed once. took ages. you should be alright.
besides, the bed for a face look is so in this season.
