It depends entirely on what kind of fish you're getting. I owned tropical fish for about five years, Guppies are a good start and they like to breed and Neon Tetras look good in a shoal, but if you're getting pond fish I wouldn't know. Just start breeding Koi's for a laugh.

Koi or tropical fish? As for tropical fish, they're extremely easy to keep, but obviously you can't let the tank get incredibly dirty. I cleaned mine out fully maybe every two or three months, but otherwise just scratching the algae off the insides with this cheap cleaner thing you can buy will do. You'll have a filter in your tank which will take care of most of the dirt itself. Also, just filling the tank with normal tap water and letting your tank heater heat it up for a bit will do. Setting the heater to minimum will be fine but you might want to turn it up every now and then depending on what fish you have. You don't need any food for breeding but obviously you'll need some to keep them alive. Just generic tropical fish food will do, which is very cheap.
You'll also have to buy a guppy breeding tank that just clips onto the inside of the actual tank at the top. This is so when your fish give birth the little ones can hide in a compartment underneath for two weeks or so until they get big enough to swim around with the others. If you let them out while they're still little the other fish will just eat them, including the fish that gave birth to them. That is pretty much all there is to breeding, but obviously not every fish is going to get it on. If you have loads though, the chances are things will get horny.
As for Koi's, I was only joking. People in Japan make a living by breeding Koi's and they can be very expensive. You'll also need a massive pond.

They're really small aswell so you can get quite a bunch and often they'll swim together in a big swarm, great stuff - makes me want fish again. :P

I dont think fish are that easy to keep as people may think, when my dad got a marine tank, it took him ages to get the filter right then the water just perfect. It's worth it though, we have clownfish and really bright and pretty ones :)
If you think goldfish are "boring" you will have to research into the water conditions for tropical or marine, otherwise you're just going to have a tank of dead fish.
