Download the firmware here: http://www.felixbruns.de/iPod/firmware/ (make sure the firmware is the same as the one your running now)
and redsn0w it up http://xs1.iphwn.org/rs/redsn0w_win_0.9.6b2.zip or quickpwn http://begolli.com/downloads/win/QuickPwn-225-2.zip can't remember which!

redsn0w didn't work, said didn't recognize IPSW (downloaded my one that im on - 2.2.1) and quickpwn failed to open (crashed)

edit: i downloaded iphone one by accident, downloading the ipod touch one now. i'll post and let u know if it works.

didn't work, quickpwn won't open for me :l

tried that and still not working. this is error im getting when i run it:

after that the notice disappears and nothing happens

Because it's a 1g iPod the highest firmware you can update to is 3.1.3. So download the 3.1.3 firmware and update the iPod via iTunes (hold shift and update>then find the 3.1.3 firmware that you downloaded).

Then download 'Spirit or Blackra1n' (either will work), and follow the on screen instructions.

3.1.3 Firmware download - http://www.felixbruns.de/iPod/firmware/ (make sure you go on the second drop down menu, NOT the first, you're looking for 'IPOD TOUCH 1st GEN 3.1.3)
