Depends when your last backup was, even if your bought apps do delete, you can easily download them again without paying. Just take a note of everything you want to keep just incase :)

It shouldn't delete if you have everything downloaded on that computer, everything in iTunes should just sync back onto the iPod when you restore it, though depending on how much there is, it may take some time.

Yup if you hadn't connected it to your computer then you will lose everything... but if you just download the apps again then you will get them back. If you re-download any apps you previously paid for then you should get a message saying " you have previously bought this item, do you want to download it again for free " - or something similar to that!

So if you can remember what apps you downloaded then you are just going to download again which could take some time depending on how many apps you had.

In future sync it to a computer every week or so, it'll backup EVERYTHING on your iPhone. Then if it messes up or you get a new iPhone, you can restore the backup and everything will return to how it was. Including music, apps, contacts, texts etc :)
