Hyia,
Everytime I load the site now (after iOS 8), it always redirects me to the mobile site, is there a way of stopping this with cookies?

You could try turning off "Mobile Device Detection" in User CP > General Settings to see if that works for you at all.

After a while, it still goes back to mobile skin.
