How do I set it to send me emails every time I get mentioned/PM/VM or quoted? Thanks x

You can't I dont think, without an additional (pointless) plugin

And actually, I suppose it would be more useful if you don't get quoted/mentioned often because then you wouldn't unnecessarily check the forums as much?

If you have tapatalk on your phone then you can get notifications for quotes and mentions. Works on iphone, I assume it will for other devices too.
