Depends what type of curry your wanting to make, if you want to keep the flavours but tone the spices down, use yoghurt, If you want to add flavour and heat the spices up, coconut milk. Evaporated milk probably the same as yoghurt but obviously more watery, thinning rather than thickening the curry.
I want a curry now.

Spices
Chillies (Best with seeds)
Onions
Coconut Milk
Chicken (Little Medium Chunks)
Coriander
Root Ginger
Cumin & Turmeric
None of above Chicken and Rice is the best :P
