Crimes - on the ones that have 'Available' in red next to it click the checkbox then click the 'Commit' button

Gta - Click 'Steal' and it'll steal a car :p

Organized Crime - Try and join someones organised crime or make your own (If you join someones u might not get cash but if you make your own you have to invite 3 people to join then you get the cash)
