How do you know that your "pro" coders aren't going to make a back door so they can get in even if they get fired? You need to be able to proof read the code that they do to make sure they don't, as you can't do PHP that is going to be very difficult.
A simple contract would suffice, if they're bound to a contract they are prevented from creating loop holes.

Yes, but both partied have to be aged 16+ for it to be legally binding.
