I usually win with Yoshi on Single Player, also he seems to go fast.

complete any whole cup (nitro or retro) on mirror mode to get rob
then, complete the cup u didnt "use" to get rob to unlock all 36 karts for all characters (E.G i you raced on retro mirror and got R.O.B, u race on nitro mirror and get all 36 karts, Bowser looks ridicullus in the mushmellow )
