    this is my fav recipe!

    Makes 24 mini cakes, or 12 larger onesIngredients125g / 4 1/2 oz softened butter
    125g / 4 1/2 oz caster sugar
    2 eggs, lightly beaten
    1 tsp vanilla extract
    125g / 4 1/2 oz self-raising flour
    2 tbsp milk
    1. Preheat the oven to 190C/375F/Gas mark 5.
    2. Either butter the tin or place the paper cases in the holes (see above).
    3. In a mixing bowl beat the butter and sugar until pale and fluffy. You can use an electric whisk or a wooden spoon.
    4. Add the beaten egg, a little at a time, whisking to incorporate, then beat in the vanilla.
    5. Sift in half of the flour and fold into the mixture.
    6. Add the milk and the rest of the flour and fold until well combined.
    7. Spoon into the tin and bake for 12 minutes or until risen and golden on top.
    8. Allow to cool for ten minutes on a rack before removing from the tin.
    then obv you can put what you want on top, for jubilee i'd say either red/blue buttercream (for butterfly cakes) or normal icing with that writing icing over the top, in the shape of crowns or 60s!

    when I looked at this thread I thought, hmm maybe I could take a recipe even though I can barely make a sandwich - WHY IS IT SO HARD TO MAKE A CUPCAKE? not even going to attempt it

    Woooo, we're going to a family member's house for a Jubilee Party this weekend so Mum and I are going earlier to make some cupcakes for everyone. We've ordered a sheet of icing for the top of a cake too; it's got a photograph of the Queen with some text on!

    That's pretty cool What cake is it going on? I expect a Victoria Sponge - for that royal theme

    Also, Mary Berry has some fantastic cake recipes. If you're interested in baking I highly recommend any of her baking books

    Ha, I think it is a Victoria Sponge actually! It's a nice big cake so my Grandma will hopefully decorate it with some swirly icing to give it a more regal touch too. We did something similar for the Royal Wedding last year. My family are big Royalists!
