    In answer to question 2...
    • TextMate (powerful text editor)
    • CSSEdit (great alongside TextMate; my favourite for editing CSS)
    • Coda (very useful all-in one)
    • Smultron (free text editor)

    In answer to question 3...
    • Adium
    • Cyberduck
    • Flip4Mac
    • HandBrake (!!)
    • iWork '09 or Microsoft Office 2008
    • OnyX
    • Quicksilver
    • Skitch
    • Skype
    • Spotify
    • Transmission
    • VLC

Agreed with Barmi on point 3, coda is the only good choice IMO for question 2. And for localhost you can either use the built in LAMP setup (I personally don't like) or use XAMPP (my preferred choice).

This is the mac forum and the OP is asking for software to use with his Mac so why are you recommending him programs that run on Windows exclusivly?

And why is that? What is wrong with the others I suggested, or Dreamweaver? TextMate & CSSEdit together are far more useful for designing than Coda alone. Coda is nice for maintenance, but the capabilities of CSSEdit are (IMO) unparalleled.

I still agree. Coda is far more superior then your other choices just due to the sheer fact of all the features it has together.

I hate TextMate, it drives me crazy.

Dreamweaver is sucky to code PHP in, same with TextMate.

Textmate is more a WYSIWYG editor, than a PHP editor, you're right.

Coda is pretty good, though sometimes I still use Notepad++ with Darwine.
I'm not crazy, ask my toaster.

I have no issue with having three programs open at once (TextMate, CSSEdit and Cyberduck) to achieve my desired result. Coda drives me crazy when editing CSS; nothing quite matches CSSEdit for design purposes. Coda has a number of features bundled together, but with little sacrifices.

    Quicksilver is wonderful!

What do you mean re TextMate though? It is not a WYSIWYG editor... it's a pure (but powerful) text editor.
