What would be the fastest way to get 40-53 thieving?

From 40-45 you should pickpocket Farmers at Draynor.

From 45-53 the best exp is by blackjacking and pickpocketing Bandits.

It can get very dull though, so you could also try Pyramid Plunder, but it is slower exp than blackjacking.
