iTunes

Hey,
I don't really understand iTunes so I'm wondering if anyone would be able to help me with some queries...

I've just got a new laptop and I'm wanting to make sure everything from my iPad is backed up to the iTunes on my new computer. I've un-authorised my old laptop and authorised the new one, but I've clicked Sync and only half of them have been sent over. I just don't understand iTunes at all. I want it so my computer is just a back-up for my iPad; I delete apps and stuff from the iPad rather than syncing it all the time. Is there any way I can do this...?

Also, I'm considering buying the new iPad later in the year so I'm guessing I'll be able to put this backup onto the new one easy enough?
