So judging by all of the information and screenshots, we can expect a massive map which has a perhaps greater range of dynamic weather with perhaps lots of extra things to do besides the story with a wide selection of vehicles and weapons to go with that? My god... I hope they don't do a Sim City on us.

Oh no, I highly doubt they'll pull a SimCity on us. That's EA's department on releases. You can always trust Rockstar Games to have a working game on release.
