Show a Poll in FORUMHOME - Has been used various times for 'important' polls
Skimlinks - Used for adverts but no-one sure if it has been configured or used at any point, possibly installed when looking at ad revenue few year back?
User CP Referral ID and Referrer in Profile - This is used under the 'About Me' profile section it shows who you've referred and who your referee was
WS vBulletin Tweet Poster - No idea but MattG said it's used.

I disabled Skimlinks and seen no impact, so it's either not used at all or my adblock prevents them from showing.

A lot of them are there so less technically-minded people can use templates. Is there a particularly big benefit to deleting some?

There's no big benefit to be honest. They can stay really if you need them.
