When I open my Computer - I see the file 'Steff's iPod' there, but after a few seconds it dissapears, and when I try opening it it dissapears. Is this an annoying method they use to stop people copying music or whatever?

Try going to control panel then click Portable media devices, it might show up there

On iTunes, have you enabled Disk use on your iPod? If it's going to show up anywhere, it'll be there. If not already ticked, tick it and then do whatever it says. ;P
