I do all the time, I downloaded Chopin's piano pieces (1.4GB worth) and at around an hour a day I'm still nowhere near done

I really enjoy Carmina Burana, the whole opera not just O Fotuna as everyone seems to assume that's the whole piece. Le Nozze di Figaro is also worth a look in my opinion.

Artists? I think you mean composers... Not only does it depend on the composer, but it also depends on the period.

Here's my top favourites, which includes some opera:

Canon in D - Johann Pachelbel
Con Te Partiró - Andrea Bocelli
Vivaldi's Four Seasons - Vanessa Mae (this is actually a techno-remix of all the compositions)
Air For The G String - London Symphony Orchestra
One Winged Angel - Nobuo Uematsu
Dance of the Knights - Sergei Prokofiev
Requiem Mass: Dies Irae - Giuseppe Verdi
Flight of the Bumblebee - Nikolai Rimsky-Korsakov
Moonlight Sonata - Ludwig van Beethoven

I have a thing for either major epic music, or soft calm music... there's not much of a grey area for me, I have no idea why. O Fortuna is a bit much for me though, I feel like I should be mass murdering a bunch of monks.
