How do you make them to 50x50?

Like on addictinggames.co.uk and miniclip.com

If you have photoshop go to image size then obviously 50 pixels by 50 pixels..

Too be honest, with the amount of games these guys are posting, I doubt they'd make thumbnails manually.

If you're on Photoshop, hold CTRL + I, and write 50 x 50px

If you're on Paint, hold CTRL + E, and write 50 x 50px

or you could do Tom's way

Youtube's will be generated on the fly using PHP probably (not 100% sure but they will be dynamic).
