Well iv got a HDMI Cable now which means my X41's can't pull the sound from the 2 cables, How can i work around this as the xbox can only have like 1 external visual and audio at a time

Pop the casing off the AV Cable like I have. Use a knife or something, looks messy but gets the job done.

i did that but over time the general wear of them forced the 2 optical audio wires to snap

I did a DIY job and took the casing off the scart lead so i could fit the scart and hdmi in, win
