The GTX 680 or the HD7970 will allow it.
Depends what you want to do on it
I'm using HD6950 and copes fine with 3 monitors gaming etc, although that cards relatively old now
You wouldn't use on-board you'd use the 2 DVI connectors and a mini display port or HDMI
I use 2 DVI and a DVI to miniDP adapter to connect the 3 monitors.
Make sure you get an active adapter though as passive won't work.
It takes literally 10 seconds to set up using Eyefinity (nvidia has its own version, forgot the name now)

Ah it's nvidia surround.
That's not going to work well in any graphically intensive applications though... also only the newest cards allow you to use true triple monitor setups without splitters that limit functionality.
