Anything by Rimsky-Korsakoff, especially the Flight of the Bumblebee and Polovtsian Dances
Doctor Who soundtracks are all fairly moving
Anything by Hans Zimmer or John Williams (although Williams' music has so much copying it hurts)
Ian Clarke's experimental flute music is really interesting, but better to play than listen to...
Most of Tchaikovsky's Nutcracker suite is so pretty

erm I know a lot of them are classical but still instrumental so yeaah... that's just off the top of my head - I love instrumental music!!
ones I most often listen to are the doctor who soundtrack and the soundtrack to a videogame called heavy rain ~
i listen to loads but those are my main ones really

Does "And I Will Kiss" from the 2012 Opening Ceremony count? It's not 100% instrumental but it might as well be. If it doesn't, it would probably have to be the opening credits music to MW2. Or anything by Hans Zimmer/Harry Gregson-Williams (shoutout to the MGS soundtrack as a whole and to Prince's Tale from HP7).
