As said loads of times be for tie him up! No I mean do some undercover work, be sneaky get your friends to ask him questions or get his friends to ask him stuff about it.

As said by Jakey above, put a keylogger on your computer and invite him round act normal do what ever you do, then say something like oh I'm just poping in the shower, no you can't join me. Go on the pc if you want then you will get his pass and you can find out what exactly is going on.

If you are serious about him then I would suggest confronting him, to me it doesn't sound like ehs serious about you because if you asked him what was going on and he said nothing then I would be thinking of getting rid of him as he's not the one.

I think he might be telling the truth. Surely if something was going on, he wouldn't open an email from her in front of you incase it had something bad in it?
