I understand what you're saying, but immortality is a device that is almost always used in vampire shows. Plus I do know of other characters that are truly immortal, Manji from Blade of the Immortal for example, and you could even argue that Haruhi from The Melancholy of Haruhi Suzumiya is immortal since she is god. Also, when anyone dies in Bleach, they don't actually die, they get to live on in Soul Society. I've also come across many other cocky and confident characters who like to toy with their opponent besides Alucard, which is why I can pin this down as just another vampire flick. From my point of view, I didn't think Hellsing was very original. Probably because I've been exposed to all of the story elements, plot devices and character archetypes before. However, you do think it is original. It's just a matter of tastes and what we've seen beforehand.

Firstly i think wikipedia. best answers your first example.
Blade of the Immortal follows the deeds of Manji, a skilled samurai who has a decisive advantage: no wound can kill him, except for a rare poison.

Bleach equally includes a cop out, as although if you die in the real world you go to soul society (that or become a hollow), if you die within soul society (as stated within the soul society story arch) you die for real* or at least can never come back.
*The Bleach universe is a little broken to say the least.

Haruhi, isn't really the right kind of anime to compare here as the story line when including danger at all is more to do with the risk she poses to others. At no point is there any real confrontation to speak of.

Plus plenty of vampire shows do include some level of immortality, but generally this is only up until they ether get holy water thrown at them, smell garlic or simply get a steak through the heart.

Haruhi despite the different focus of the Haruhi Suzumiya series is still the closest thing you've really come up with to an immortal character "/ Although this is again greatly challenged by the implication of time travellers (and her lack of quantum awareness), but I'll let that slip as making sense of a time travel enabled universe is something few manage to do even remotely convincingly.

If you want to include more the more supposed immortal characters, whom all have one big weeknes (thus meaning there not imortal) you may as well through super man with his kyrptonite in there for good measure.
Equally if you want to allow the respawn ability in to avoid characters getting killed off, you have everything from the dragonball series to pretty much every first person shooter game ever created "/
Its not really the same dynamic as simply "cant die"

, you may as well add in everyone from superman t

D.gray-man manga was before Hellsing anime. Which I see that the anime is hardly related to manga of Hellsing.
