When did you last get a new card? If you've not had one for a few years, then you may not have got a contactless one yet.
If not, when you next get a new card, depending what type of account you have, I assume, then they should send you a contactless one, as I did.

do shops have to specifically take Apple Pay to be able to use Apple Pay? or is it just where it's contactless?
Will work where contactless works. The Apple Pay part is about the increased limit later down the line I believe.
