Cannons are not worth loads for a simple reason, lots of people buy the cannon once they do the quest - Then realise that they cant afford to keep buying cannon balls. So the people try and sell the cannon, but every one else has done the same. And there are just cannons being sold and no one buys them - Meaning the prices drop.
