It doesn't. Even Isaac Newton predicted that the world couldn't end earlier than 2060 based upon scripture, obviously the bible is subject to interpretation - not that I'd believe any kind of religious scripture anyway.

It doesn't literally state in the bible "World ends 21st May 11' lol. It is yet again another theory, however this theory is back up by more evidence than most - I don't believe it no, never have done either.

Holy God reminds us that one day is as 1,000 years. With the understanding that the seven days referred to in Genesis 7:4 is 7,000 years, we know that when God told Noah there were seven days to escape worldwide destruction. God was also telling the world there would be exactly 7,000 years to escape the wrath of God that would come when He destroys the world on Judgment Day. Because Holy Infinite God is all-knowing, He knows the end from the beginning. He knew how sinful the world would become.

Seven thousand years after 4990 B.C. (the year of the Flood) is the year 2011 A.D. (our calendar). One year must be subtracted for the lack of a year number 0.

4990B.C + 7000 – 1 = 2011

Holy God is showing us by the words of 2 Peter 3:8 that He wants us to know that exactly 7,000 years after He destroyed the world with water in Noah’s day, He plans to destroy the entire world forever. The English word rapture was not actually used to identify the action of Jesus taking His True Believers until the year 1738. The Bible declares that Jesus will come to take all His True Believers at the end of the Final Great Tribulation (Mat.24:29). We (and the saved dead) will all (worldwide) be transformed into spirit form in the blink of an eye meeting Jesus in the sky - Heaven bound (1 Cor.15:51&52). Revelation 1:7 declares that every eye shall see Him. At this very moment when we are taken, Judgment Day will simultaneously begin for those left behind. There will be a great worldwide earthquake to which the world has never know

The last day of the Final Great Tribulation - The Rapture - Judgment Day. These 3 events all merge on a single day. Once Jesus takes His True Believers out of this physical world on the last day of the Final Great Tribulation, a massive worldwide earthquake which the world has never seen (Rev.16:18) will start the period of 5 months of terror known as Judgment Day (Rev. 9:5&10). This earthquake will not only destroy cities, explode gas lines, create electrical fires, destroy underground water & sewer pipes, destroy roadways - stopping all commerce, break dams - massive flooding, destroy nuclear power plants - sending out massive radiation but will also create massive tsunami waves wiping out coastal cities. Not only is this a helpless state of being but now add to this emotional state the realization that there is no longer any hope of salvation. Is there or can there actually be an end to this world, the universe & all of Creation? It seems so implausible. Yet this is what God has been telling us through the Bible for millenia. All this terrifying information seems like a story. The Final Great Tribulation. The Rapture. Judgment Day. Now the End of the World? Yes. After the five terrifying months of "hell" - 153 days to be exact, all of Creation including all living things & man will burn up & melt with fervent heat with a great noise (2 Peter 3:10-12). This is God's punishment for this cursed world. Judgment "Day" is actually a period of time of 5 months not a single day. From the start of Judgment day on May 21, 2011 - then counting five months later (exactly 153 days) - brings us to October 21, 2011. This is the date of the End of the World! Once the Lord totally destroys all of Creation He states in Rev. 21:1 that He will create a new heaven & earth. Isaiah 65:17 says that none of it will be remembered nor come to thought in the new heaven & earth.
