To download software or buy something which enables me to wirelessly control whats played on my ipod from my computer?

My speakers are good but connected to the TV, I can connect my ipod to it but is annoying having to get up and change the song, so ye. :P

If you jailbreak it you can get a VNC server for it and then connect to it using RealVNC or whatever the free client is called, sorry to not be much help, but it's a push in the right direction

Jailbreaking the device depends on which firmware version you have on your iPod. It has to be a iPod Touch.

He said iPod, not iPhone. Though you can jailbreak an iPhone as well.

I'd like to be able to remotely control it from my PC, without jailbreaking.

I'm on 2.2.1 firmware, on a Vista (soon to be 7) laptop. Both devices are connected to the same wi-fi network.

You have to jailbreak to do it AFAIK.
