Not if it's going to be taking one picture every 80 seconds. That would be good for a very long static timelapse, but if you're going to be in a car and the scenery is going to be changing, it will just appear very random and spasmodic. You want one picture every five seconds at the most. Honestly, a moving car isn't the best place to record a timelapse from.
i'd do 10 seconds, you move fast in cars any longer and you will miss heaps!
I agree with @Neversoft; if the scenery is going to be changing it'll look very random with a long timelapse so maybe something like 5 seconds (or less) would be appropriate.

if you want it to look smooth, chris is right. you need to go with the higher capture rate. i'd say at the LEAST 1 every 3/4 seconds. if you get too many you can edit it post-capture and trim down shots you don't need.
