"One" has never been trademarked, "PS One" has. Did you actually read the list?

It depends on the context, you might have grounds to trademark ordinary words for a particular sector like technology, however you will not be able to get a trademark on a number as obviously companies might like to number their products. That said it is conceivable that you could trademark One as a company name but you wouldn't be able to sue over its use in a product name.
Do you not remember Zenimax suing Mojang over the word "scrolls"? I think they now own that trademark and that is a word. A trademark doesn't mean you can't use a word unless in business. However, this doesn't mean a judge would uphold any lawsuit even if Sony did have "one" trademarked (which it doesn't).

..even if it wasn't meant to be derogatory it was still so.
Intellectual property is out of control and I'm sure stranger things have happened.

OT: Whitten said that the Xbox One will use more power "..than the entire world did in 1999." Interesting quote!
