If he has then someone would be able to see him delete them, right? From like more mod logs. I think it would happen.

No they can't, you have to have administration permissions to view admin logs.

Give me a minute and I will check it out.

Please note that none of the admins can delete mod / admin logs as they are not given the power to because they might do it by mistake and its not necessary to delete them anyway.
