Any idea where I can find a full list of the game controls?

Look in settings, it's somewhere in there..

It will have a full list of all the buttons etc, and you can change them if you like.

PS. Anyone who has/is getting flight sim, you WILL need a joystick.. It's virtually impossible to control an aircraft without.

I get my flight plan about 1 hour 30 minutes prior to departure, my mate just got his and he's doing the same route but he departs before me. FCA54 or something I think.
