Death Note (37 episodes) - Amazing in every way.
Tengen Toppa Gurren Lagann (27 episodes) - The most epic anime you'll ever see. Better than Death Note in some respects.
Utawarerumono (26 episodes) - For an excellent story, brilliant characters, and immense action.
Ghost in the Shell (series and movies, 26 episodes) - The best Sci-Fi anime ever made.
Claymore (26 episodes) - Awesome story, fantastic characters, amazing fights. The manga's even better.
Ergo Proxy (26 episodes) - Complex, smart, interesting. Not for those who expect answers straight away and don't like to think.
Paranoia Agent (13 episodes) - The best mini anime series I have ever seen, and a true masterpiece.
Kaiji (26 episodes) - A gambling anime, so it most probably isn't like anything you've seen before. It's a nice change, quite depressing though.
Peace Maker Kurogane (24 episodes) - The best historical anime I've ever seen. Quite slow and half of the episodes appear to be fillers. Once it get's serious though, it's bloody amazing.
Read or Die (OVA, 3 episodes) - The best OVA I've ever seen.
Bleach (180+ episodes) - For some amazing action and pretty epic moments.
Guyver: The Bioboosted Armor (26 episodes) - My personal favourite Sci-Fi anime.
Tekkonkinkreet (movie) - My joint favourite anime movie.
The Girl Who Leapt Through Time (movie) - My other favourite anime movie.
Trigun (26 episodes) - You're not a fan of anime until you've seen this.

If Nail comments on this post, don't listen to him. He has only seen about one anime on the list above, and is just looking for attention.

Yeah, as you can see I'm more into short series than on-going ones.
