How do I make the effect on text that makes it look like it's 'indented' or 'engraved' in the background?

black text -> fill alpha 20% -> drop shadow 1px size normal blending white 40% (slightly brigter than the fill) -> inner shadow black 1 px size 50% or so

Mess around with the variables, but its pretty simple - those are all layer effects btw.

Yep, use bevel and emboss and use the engrave function.
