File > Create New Playlist, put all the songs in there then when you're done click sync and select the playlist and it'll put all the songs in that playlist onto your iTouch, you can also sync if you just add one or two songs into the playlist it'll still put it on

    Maybe stupid little thing but..

Have you gone into your iPod settings and enabled music syncing?

To do this go to your iPod in iTunes and at the top click Music and tick the box 'Sync Music' and put it on 'All songs & playlists'.

    Hope this helps.

You can also manually manage music and just drag and drop that song into your iPod, and that means you can delete all the music in your library and it won't sync it off of your iPod (trust me, its annoying)

If apps don't run try turning your iPod off and then on again, freeing up some memory.
