You should use whatever canvas will fit onto your monitor. It's the content area size which you have to watch. I personally create my optimum canvas size at 1200x900 as that fits into my photoshop window quite nicely without any scrolling. I then create a new document at about 900x900 copy it into my main document im working on and then rename the layer "WIDTH" and put it to the bottom. I then ensure that all the main content will be within this area as the main resolution you should design for is 1024x768. and a width of 900 fits quite nicely with a good margin either side. (This is when Im doing centered layouts btw)
And I dont just mean the area is too big or the entire image. I mean all the fonts are too big and everything looks really blocky.
First of all, I'd like for people to stop using the phrase, "it was only made in such and such." It's getting used as a fallback plan incase anyone else thinks its ****, which you shouldn't be going about doing...
Anyway, I set mine to 900x600 or sometimes 1000x500 depends what mood I'm in!![]()

I second that.
I personally just create rules to design within, a good width I find is usually 850px (for the design, not the canvas).
I upped a psd to explain what I mean (created in photoshop CS3 ). Open it up and press ctrl + h (to enable "extras") then you will see the rulers appear for you to work in between. Press ctrl + h again to hide, on saving of the image those rules will obviously not be rendered out.
