so I read 2 guides and one says use protect from melee against the dagannoth mother because her range is weak but another says you should use protect from missiles because the range can hit twice.. which is the correct prayer to use so I don't get my bum kicked?

And am I okay doing this quest at cb 78 cos I saw someone say 85+ is recommended

There's a safe spot so you needn't protect from melee if you're using range or magic. You can always quickly switch prayer if need be anyway. I did it around the same level as you and it was easy.

tbh i did it with 11 prayer and 1 defense...

why use prayer lol? theres no skill in that.

This is what i do for most Boss's if im not sure, theres always users who will post boss fights and boss tactics on youtube (i even watched one before i went to fight nomad).

Best of luck if you havent killed the boss at the moment.

off to go kill it now. I did watch a walkthrough video but that person used protect from melee but I saw the boss was hitting twice but it looked pretty inaccurate so I guess that's what some of the guides mean, i'd take more damage from the melee than range because the melee is more accurate.
